Chutney powder — known as karam podi in Andhra and idli podi across South India — is the dry seasoning blend you stir into a spoonful of ghee or oil and spread on a hot idli or dosa. Ours is a roasted-and-ground mix of urad dal, chana dal, dried red chillies, sesame seeds, curry leaves, and a pinch of asafoetida. No coconut, so it keeps well at room temperature without going rancid. We dry-roast each ingredient separately so each one hits its own aroma peak before grinding — coriander needs less heat than urad dal, dal needs less than chilli — and then blend them together for a balanced finish. Cooked in our RMV 2nd Stage kitchen in small weekly batches, ₹450 per kg. Stir a teaspoon into hot ghee and spread it on idli or dosa, sprinkle it over curd rice, dust it on a boiled egg, or use it as a dry rub for paneer before pan-frying.
