Sambar powder is the difference between an alright sambar and one your guests text you about later. Ours is the household-style blend cooked in our RMV 2nd Stage kitchen — coriander seeds, urad dal, chana dal, fenugreek, dried red chillies, curry leaves, asafoetida, and turmeric, all dry-roasted to release their oils, then stone-ground while still warm. We don't use machine-ground commercial blends or any anti-caking agents. The powder is coarser than the supermarket stuff on purpose — you want a little texture so the spice releases slowly into the dal as it simmers. ₹600 per kg, but most households order 250-500 g at a time since one teaspoon is plenty per pot. Use it for sambar (obviously), but also as the seasoning in vegetable kootus, in kosambari salads, or sprinkled over scrambled eggs if you want to be unconventional. Stays aromatic for about 4 months in an airtight container kept away from direct sunlight; refrigerate if you live somewhere humid.
